Recently, my boyfriend and I took a trip up to St. Augustine for our anniversary. I hadn't been there in years! But we knew the main stop on our list was going to be the St. Augustine Distillery and its adjacent Ice Plant Bar. Hearing nothing but good reviews, but not knowing what we were walking into, we were floored when we arrived. Every surface, fixture, detail is gorgeous (including the bathrooms, just in case you were wondering - no seriously, go look at the bathrooms while you're there). Greeted by friendly staff, we were soon sat and were given a list of too many tasty sounding cocktails to drink in one sitting. We ended up with the Clockwork Orange and the High Noon, the former made with their St. Augustine Gin, the latter made with High West Rye. Neither disappointed in the least.
Their food is farm to table or locally caught where possible. In addition to Ice Plant, the St. Augustine Distillery as a company prides itself on the foundation of keeping their business investments and ingredients local and their waste low all while producing impeccable product.
The distillery tour is free and I recommend indulging in it. Not only do you get to learn about the history of the company and gain insight into their future, but you get a free cocktail demo and a tasting!
When you're done (and inevitably bought something from the gift shop), it's only a five minute drive to the streets of downtown St. Augustine and the Castillo de San Marcos fort. Unfortunately, there weren't any cannon firings while we were there.
Needless to say, we're already planning our next trip. Must. Have. More. Cocktails.
